Excellence and authenticity in Val Ferret

Balancing form and content is never easy, but Ristorante La Clotze manages it with commendable ease. Located at the entrance to the Val Ferret—a magical valley reminiscent of Steinbeck, Jack London, and Hemingway—this restaurant is a safe haven for those seeking a warm and authentic welcome. The atmosphere is intimate and cosy, presided over by young waiters who put customers at ease with discretion and a confident manner reminiscent of Wodehouse's butler Jeeves. The gastronomic experience: The cardoon flan with bagna cauda: a special mention for the use of the official Piedmontese spelling on the menu. This isn't fussiness, but rather a sign of philological precision reflected in the flavor: a delicious, hearty flan, far removed from the "Lilliputian" portions that often plague modern restaurants. The polenta: served in surprisingly large copper casseroles. While it's true that quantity isn't everything, I'm equally put off by basin-sized plates with skimpy portions (the famous cabasisi are grateful for their old-fashioned generosity). The polenta, perfectly blended with the cheeses (Bleu d'Aoste and Fontina), was lump-free and accompanied by an excellent stew of the day. The finale: a perfectly contrasting crème brûlée and, to top it all off, a delicious mint elixir based on the owner's grandmother's recipe. In a world of self-proclaimed experts, the chef at La Clotze reminds us that expertly prepared polenta is the prerogative of a select few. A true testament to tradition, with an absolutely excellent quality-price ratio. I'll definitely be back to explore the wine list!

Il flan di cardi con bagna cauda: nota di merito per l’uso della grafia piemontese ufficiale a menù. Non è pignoleria, ma un segnale di precisione filologica che si ritrova nel gusto: uno sformato delizioso, robusto e lontano dalle porzioni "lillipuziane" che spesso affliggono la ristorazione moderna.
Le polente: servite in casseruoline di rame sorprendentemente capienti. Se è vero che la quantità non è tutto, è altrettanto vero che mi indispongono i piatti grandi come catini con porzioni striminzite (i famosi cabasisi ringraziano per la generosità d’altri tempi). La polenta, perfettamente amalgamata ai formaggi (Bleu d’Aoste e Fontina), era priva di grumi e accompagnata da un umido del giorno eccellente.
Il finale: una crème brûlée dal contrasto perfetto e, per chiudere, un delizioso elisir alla menta basato sulla ricetta della nonna del proprietario.
In un mondo di esperti improvvisati, lo Chef de La Clotze ci ricorda che una polenta concia a regola d’arte è una prerogativa di pochi eletti. Un avamposto delle tradizioni con un rapporto qualità-prezzo assolutamente corretto. Tornerò senz’altro per approfondire la carta dei vini!
