It’s a brand-new concept in a land rich in gastronomic tradition. Amazing dishes, with well-defined flavours and creative flair honed by working in great restaurants like Crippa, Bottura and the nearby Gilmozzi. The Chef is fond of using herbs gathered in the mountains during summer, locally farmed products, fish, and ingredients hardly known locally, from countries as far as Mexico.
