A week in pink

On the occasion of International Women’s Day, from 2 to 8 March, the kitchen of Matteo Siorpaes, in-house chef and sommelier, will offer, alongside the classic menu, one of the most traditional and well-known dishes of the Ampezzo valley.

These are the "Casunziei," a type of ravioli filled with beetroot, which in this case feature an intriguing twist: the dish is prepared using the same ingredients but in reverse order, giving it not only a unique flavour but also a delicate pink colour.

The filling consists of Grana cheese, brown butter, and poppy seeds, while the pasta is made with beetroot and a cooked flour sauce, along with "cuderae," a white turnip usually mixed with the red beetroot in the traditional recipe.

Best enjoyed on the panoramic terrace, with the incredible views of Civetta and Marmolada.

Exclusively for this event, the "Red Velvet" dessert will also be available in pink.

On the evening of 8 March, the dinner will be accompanied by the sweet notes of harpist Sonia Dainese, adding a vibrant yet delicate touch to the evening. During the night, all ladies will receive a complimentary mimosa.
