In our farm cheese dairy, the milk from our cows is processed by hand into grey cheese and farmer’s butter using traditional methods. The farmer’s butter with its full-bodied, nutty flavour and the traditional flower on each piece makes breakfast something special. The Veiderhof grey cheese is a rustic delight and gets its name and distinctive flavour from its appearance and the slightly whitish layer of noble mould that forms on its exterior as it matures. This typical South Tyrolean sour milk cheese is known for its intense flavour, which becomes stronger as it matures. As a skimmed milk cheese, grey cheese can also be found in upmarket restaurants. It tastes excellent traditionally with vinegar, oil and onion or as a dumpling dish.
